Whiles watching a documentary about olive oil, I stumbled into this Spanish family run olive groves, which also own their own press machinery, which is crucial when harvesting the olives, as every minute counts and oxidation takes place as soon as the olives are taken from the trees, having said this ...olives must be put through the press ASAP if you don't own the machinery , the olives may have to wait till is their turn to be press, by his time the goodness of the olives have deteriorated, so it is not as good as it should be, or if the oil comes from a co-operation, each individual could be harvesting different types of olives, as a coop they press all the different olives at the same time, hence the olive oil is not the same, then, you have a blend oil! not as pure as this one, this oil is grown in a dessert which the climate is quite unique, they also have their own water supply from the land... that's the reason they called their oil Dessert Gold, because of their precious WATER in their land... Bought this olive oil. It smells tomate dont know why. Its extra virgin but not bitter as all extra virgin olive oils. I use it for salads, bruschetta but no taste of oil. May be I am not expert in this.
