Q: I really really want this feta but I was told it would spoil in shipping, any ideas?

do not buy in the summer it was spoiled by the time it got to me.waste of money

Q: How long will it last once opened and stored in original brine?

Well... Health inspector for commercial use (restaurant and stores) required use for ANY products (cheese, meats) - up to 7 days. At home use - I would use for months. However, this feta must be inside the brine (salty water). If feta will be "touching" air - feta will be moldy in few days.
